Vince started Tapenade Bistro in 2003 with the idea of bringing a downtown urban bistro to Steveston.

Born in Los Angeles to French parents, Vince was raised on many of the French classics that he serves and features at the Bistro. Before opening the Tapenade Bistro Vince had been a veteran of the Vancouver area restaurant business since 1985. Through the 1990's Vince had lived in Paris then Brazil and spent a couple of years traveling around the world. Many of the dishes, ideas and décor are inspirations from these travels as well as Vince's French heritage.

Vince continues to educate himself on wine and food and through the years has also accomplished his BA from Simon Fraser University as well as an associate degree in Hospitality Management.

Born in Victoria BC, Chef Kayla Dhaliwall has always had a deep and intimate relationship with food. It was always a childhood dream of hers to be a chef and to feed many people around the world. Food was an enormous part of her culture and family life and this passion has transcended into her dishes. After cooking in different kitchens around North America, Kayla has now found inspiration and gratification behind the stoves of Tapenade Bistro.

Kayla’s culinary education began in her grandmothers kitchen at 4 years old and has become a growing obsession ever since. Kayla received her culinary degree from VCC, while working at deacon’s corner before school and wild rice after class and on weekends. Once finished, Kayla moved on to work at Fairmont waterfront hotel. Kayla has worked with food in many outlets, from diners to lounges and vineyards to hotels. She has cooked for politicians, professional athletes, celebrities and most dearly her friends and family. kayla spends her free time working with others at H.A.V.E cafe in the downtown eastside, helping give culinary job skills to people that want them the most.

In each kitchen Kayla has worked in, she has found inspiration in the surrounding environment. Her determination to strike emotion and comforting memories adds to the authenticity of her cuisine. Her philosophy towards food is very clear; simple elegant food cooked with proper technique and passion. These mantras will no doubt follow her into the kitchen at Tapenade Bistro as its Executive Chef.
